Spicy Eggplant
saucy and spicy!
Craving something with gravy and some heat? Try this delicious eggplant recipe!

INGREDIENTS
• 2 tbsp. cooking oil
• 2 tsp. black mustard seeds (optional)
• 6 small eggplants diced into medium size pieces
• 1 tablespoon salt
• 2 green chilies, chopped
• 2 small red onions chopped
• 2 cloves of garlic diced
• 1 tsp diced fresh ginger
• 2 tbsp. lime juice
• 1 tbsp. Momma T’s Original Masala
• 2 tbs melted butter
Instructions
[1] Heat a skillet or non-stick pan (medium) add 1 tbsp oil until warm
[2] Add mustard seeds and fry until the seeds "pop" *OPTIONAL*
[3) Add eggplant pieces and season with salt. Fry the eggplant until they turn light brown and tender, then remove from the flame.
[4] Grind the mixture of green chilies, onions, garlic, ginger, and the lemon juice until soft in a blender or mortar.
[5] Add the wet mixture back to the pan and add the melted butter cook for 5 minutes on medium-high.
[6] Add 1 tbsp. Momma T’s Original Masala to curry and fold spices into mixture.
[7] Serve hot with naan or cooked rice.
