Momma T's Lentil Soup Kit provides you with all the spices you need to make a delicious and hearty South Indian lentil and mixed vegetable stew! This classic dish is so easy to make and is super flavorful with a variety of spices, herbs, and vegetables to customize your dish! This dish uses both the Momma T's Garam Masala and Momma T's Original Masala which comes with the kit!
Ingredients:
Momma T's Lentil Soup Kit (all spices included)
1/4 cup extra virgin olive oil or any other oil of your choice
1 medium yellow or white onion, chopped
2 carrots, peeled and chopped
1 cup cauliflower florets
1 cup of string beans
1 cup chopped celery (large pieces)
1 cup cut okra
1 cup of peeled and dices pumpkin, squash, or yam
1 large can (28 ounces) diced tomatoes, lightly drained
1 cup brown or red lentils, picked over and rinsed
4 cups vegetable broth or chicken stock
48 oz water
1 tsp salt, can add more to taste
Note:
We have listed specific vegetables but you can substitute any of them for any other vegetable you would like to use. You can also add any meat to this dish.
Eat with some cooked rice or with a piece of bread
Instructions:
Before cooking, open your Momma T’s Lentil Soup Kit and take out your tamarind concentrate to use later!
Add oil to a pot and after it's hot add the powders from the soup kit, and chopped onions. Cook, stirring often, until the onion has softened and turned translucent, which should take about 2-3 minutes.
Add in the vegetables and the drained diced tomatoes and cook for a few more minutes, stirring often.
Pour in the lentils, broth, water, and tamarind concentrate into the pot. Add the salt.
Raise heat and bring the mixture to a boil, then partially cover the pot and reduce the heat to maintain a gentle simmer. Cook for 25 to 30 minutes, or until the lentils are tender or holding their shape.
Transfer 2 cups of the soup to a blender and purée the soup until smooth. Pour the puréed soup back into the pot.
Warm olive oil in a separate pan over medium heat. Once the oil is hot, add the mustard and cumin seeds- that come in the small bag in the lentil kit- to the oil and saute until you hear the seeds popping.
Then add the curry leaves. After 1 minute transfer this to the large pot of soup and mix.
Taste and season with more salt or pepper if needed! Serve while hot and if you’re feeling fancy, toast some bread with a little olive oil to make the perfect soup and bread combo!
