Momma T's Lentil Soup Kit Recipe

Momma T's Lentil Soup Kit provides you with all the spices you need to make a delicious and hearty South Indian lentil and mixed vegetable stew! This classic dish is so easy to make and is super flavorful with a variety of spices, herbs, and vegetables to customize your dish! This dish uses both the Momma T's Garam Masala and Momma T's Original Masala which comes with the kit!
Momma T's Lentil Soup Kit (all spices included)
1/4 cup extra virgin olive oil or any other oil of your choice
1 medium yellow or white onion, chopped
2 carrots, peeled and chopped
1 cup cauliflower florets
1 cup of string beans
1 cup chopped celery (large pieces)
1 cup cut okra
1 cup of peeled and dices pumpkin, squash, or yam
1 large can (28 ounces) diced tomatoes, lightly drained
1 cup brown or red lentils, picked over and rinsed
4 cups vegetable broth or chicken stock
48 oz water
1 tsp salt, can add more to taste
We have listed specific vegetables but you can substitute any of them for any other vegetable you would like to use. You can also add any meat to this dish if you would like.
Eat with some cooked rice or with a piece of bread
Open the Momma T's Lentil Soup Kit and take out the small bag with the tamarind piece inside, add to a cup of lukewarm water, let rest.
Cook lentils in a pressure cooker or in an open pot until they are tender and set that aside while you prepare the vegetables for the soup.
In a large pot, add 2 teaspoons of oil and add onions once heated. Cook, stirring often until the onions have softened and turned translucent (2-3 minutes). Then add tomatoes and your choice of vegetables/meat.
Take the soaked tamarind and strain the juice into the pot. Add water, salt, and cook slowly until the vegetables are fully cooked.
Then add the lentils, making sure to incorporate them in with the vegetables. Cook for 20 to 25 minutes.
In a blender add the powders in the Momma T's Lentil Soup Kit and one cup of water. Purée this until smooth. Then pour the purée back into the pot (2 minutes).
In a separate small pan, heat some olive oil over medium heat (1-2 minutes). Once the oil is shimmering, add mustard and cumin seeds (which come in a small bag) and saute until you hear popping sounds. Then add the curry leaves.
Pour this mixture into your soup and mix. Taste and season with more salt or pepper if needed and you're ready to eat!
