Simple Channa Masala

with Chickpeas, Tomatoes, and Spices


This is super simple and easy dinner recipe using fresh chickpeas, tomatoes, and spices!


INGREDIENTS


• Dry chickpeas or canned chickpeas

• ¾ cup plain yogurt or 1 can organic coconut milk

• 2 tbs vegetable oil or butter

• ½ teaspoon cumin seeds (optional)

• ½ teaspoonful small black mustard seeds (optional)

• 1 medium onion, thinly sliced

• 2 garlic cloves, finely chopped

• 1 teaspoon chopped fresh ginger

• 2 green chili peppers (optional)

• 2 medium tomatoes, chopped

• ½ tsp salt

• Chopped Cilantro to garnish.

• 3 cups water



If preferred to use dry chickpeas: Soak chickpeas in water overnight. Drain the water after soaking. Add soaked chickpeas to a pressure cooker and add water until they are all soaked, add ½ teaspoon salt, ½ teaspoon turmeric, and cook until they are tender.


Instructions

[1] Add yogurt or coconut milk, Momma T's Garam Masala and Momma T’s Original Masala, garlic, ginger and green chilis, mint leaves and tomatoes to a blender and grind the ingredients to a smooth paste.


[2] Heat oil in large skillet on medium heat. Add mustard seeds and cumin + fry until seeds starting popping.


[3]Add thinly sliced onions. Fry in oil for about 3 minutes.


[4] Stir in cooked tender chickpeas and sauté for couple minutes and add the yogurt mixture on top of the chickpeas and cook until all the ingredients are blended well.


[5] Add rest of the water. Reduce heat to low, cover and simmer for 10 minutes until they are tender and well incorporated. Add salt and garnish with cilantro.


[6] Serve hot on cooked rice or eat with naan or tortillas.
