Aloo Gobi

Cauliflower, Potatoe, and Spices


Aloo Gobi is a very classic Indian dish of potatoes and cauliflower. It's a one-pot, super simple, comforting dish that's ready in 30 minutes flat. Full of flavor, you'll be making it every night.


INGREDIENTS


2 tbsp. vegetable oil

• 1 red chili, diced

• 2 garlic cloves, finely chopped

• 1 teaspoon chopped fresh ginger

• ¼ teaspoon cayenne pepper


• 3 russet potatoes, peeled & 1" chopped pieces

• 1 medium head cauliflower, cut into florets

• 1 cup low-sodium vegetable broth

• Salt + Pepper

• Chopped Cilantro to garnish.



INSTRUCTIONS


[1] In a large skillet over medium-high heat, heat oil.


[2] Add chili, garlic, and ginger and cook until fragrant (1 minute).


[3] Add Momma T's Garam Masala, turmeric powder, and cayenne pepper and cook until toasted (1 minute).


[4] Add potatoes, cauliflower, and vegetable broth and season with a couple of pinches of salt and pepper. Reduce heat (medium-low) and cook covered, until potatoes and cauliflower are tender (15 minutes).


[5] Garnish with cilantro to serve.
